The Picky Eater’s Answer to Vegetables: Balsamic Roasted Veggies and Garlic

This mouth-watering, easy-to-make dish is packed with nutrients and bursting with flavor, ensuring that even the most stubborn eaters will be asking for seconds.

Ingredients:

– 2 cups Brussels sprouts, halved

– 2 cups carrots, sliced

– 1 cup broccoli florets

– 1 cup red bell pepper, sliced

– 1 cup zucchini, sliced

– 4 cloves garlic, minced

– 1/4 cup balsamic vinegar

– 1/4 cup olive oil

– Salt and pepper, to taste

– Fresh herbs for garnish (optional)

Instructions:

1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

2. In a large mixing bowl, combine the Brussels sprouts, carrots, broccoli, red bell pepper, and zucchini.

3. In a small bowl, whisk together the minced garlic, balsamic vinegar, olive oil, salt, and pepper until well combined.

4. Pour the balsamic mixture over the vegetables and toss until they are evenly coated.

5. Spread the coated veggies evenly across the prepared baking sheet.

6. Bake for 25-35 minutes until the vegetables are tender and lightly caramelized on the edges. Be sure to keep an eye on them and stir occasionally to ensure even cooking.

7. Remove from oven and let cool slightly before serving.

8. For an extra touch of flavor and presentation, garnish with fresh herbs such as parsley, basil, or thyme.

About Us

The Edvocate was created in 2014 to argue for shifts in education policy and organization in order to enhance the quality of education and the opportunities for learning afforded to P-20 students in America. What we envisage may not be the most straightforward or the most conventional ideas. We call for a relatively radical and certainly quite comprehensive reorganization of America’s P-20 system.

That reorganization, though, and the underlying effort, will have much to do with reviving the American education system, and reviving a national love of learning.  The Edvocate plans to be one of key architects of this revival, as it continues to advocate for education reform, equity, and innovation.
