When it comes to crafting the perfect taco, the filling is everything. While proteins like beef, chicken, or beans often take center stage, the best vegetables for tacos deserve just as much attention. Not only do they bring vibrant flavors and textures, but they also pack a nutritional punch that can elevate your taco game. Whether you’re a meat lover or a staunch vegetarian, incorporating the right vegetables into your tacos can create a delightful culinary experience.

1. Bell Peppers: A Colorful Crunch

Bell peppers are a taco classic, and for good reason. Available in a variety of colors—red, yellow, green, and even purple—these crisp vegetables add a pop of color and sweetness to your dish. They’re low in calories but high in vitamins A and C, making them a nutritious addition.

When preparing your tacos, try slicing bell peppers into thin strips or dicing them for a more integrated filling. Whether you choose to sauté them until they’re slightly caramelized or keep them raw for that fresh crunch, bell peppers can be versatile. Pair them with spicy salsa or a creamy avocado dressing to enhance their flavor.

Interestingly, bell peppers also contain antioxidants, which can help reduce inflammation and combat oxidative stress in the body. Adding just a handful of bell peppers to your tacos not only brightens the dish visually but can also contribute to your overall health.

2. Avocado: The Creamy Essential

No taco is complete without the rich and creamy texture of avocado. This fruit (often mistaken for a vegetable) is not only delicious but also loaded with healthy fats, fiber, and vitamins. It’s a fantastic alternative to sour cream or cheese, adding richness without unnecessary calories.

Incorporating avocado into your tacos can be done in several ways. You can slice it, mash it into guacamole, or even use it as a base for a creamy taco sauce. Pairing avocado with spicy elements like jalapeños or pepper jack cheese creates a delightful balance that will tantalize your taste buds.

Recent studies have shown that avocados can contribute to better heart health. Their fat content is primarily monounsaturated fat, which is known to lower bad cholesterol levels. This makes avocado not just a tasty addition to your tacos but a heart-healthy one too.

3. Onions: The Flavor Enhancer

Onions are the unsung heroes of taco fillings. They enhance flavors, add a sharp bite, and contribute to the overall complexity of your tacos. Whether you opt for yellow, red, or white onions, each type brings its unique flavor profile.

To maximize their impact, consider caramelizing onions for a sweet and savory touch. Alternatively, fresh diced onions provide a crisp contrast when sprinkled over your taco just before serving. Experimenting with pickled onions can also add a tangy twist that brightens the dish.

Onions are also rich in antioxidants and have anti-inflammatory properties. They can aid in digestion and are known for their potential cancer-fighting properties. Including onions in your tacos isn’t just about flavor; it’s about making a health-conscious choice too.

4. Tomatoes: Freshness in Every Bite

Tomatoes are essential for any taco lover looking to add freshness and acidity. They bring a juicy component that can balance out richer ingredients. With varieties ranging from cherry tomatoes to beefsteaks, there’s no shortage of options to choose from.

To create a refreshing salsa, dice up fresh tomatoes, add some cilantro, lime juice, and a pinch of salt. This simple mix can elevate your tacos by adding an extra layer of flavor. Roasting tomatoes can also deepen their sweetness, making them a fantastic accompaniment to heartier fillings.

Moreover, tomatoes are a great source of lycopene, an antioxidant linked to many health benefits, including improved heart health and reduced cancer risk. They not only enhance the taste of your tacos but also contribute beneficial nutrients.

5. Corn: Sweet and Satisfying

Corn is a delightful addition that brings sweetness and a slight crunch to your tacos. Available as fresh kernels, grilled corn, or even roasted corn salsa, it adds a unique flavor dimension that complements a variety of fillings. (See: Nutritional benefits of bell peppers.)

Consider using corn as a topping or mixing it into your main filling. Grilled corn, charred to perfection, adds a smoky flavor that pairs beautifully with meats and other vegetables. For a refreshing twist, try a corn and avocado salad as a topping for your tacos.

Corn is also a good source of fiber, which can aid digestion and promote a healthy gut. Including corn in your tacos not only enhances their taste but also contributes to your daily fiber intake, making your meal more satisfying.

6. Mushrooms: Earthy and Umami

Mushrooms are a fantastic way to introduce a hearty, umami flavor to your tacos. Varieties like portobello, shiitake, or cremini can provide a satisfying texture that mimics meat, making them perfect for vegetarian taco recipes.

Sautéed mushrooms can be seasoned with garlic and herbs to bring out their rich flavor. Chopped finely, they can also serve as a great base for taco filling, blended with beans or grains for an extra protein boost. Their ability to soak up flavors makes them a versatile option for any taco enthusiast.

Interestingly, mushrooms also offer several health benefits. They are high in B vitamins and minerals such as selenium, which can help boost your immune system. Adding mushrooms to your tacos not only enhances their flavor but also adds nutritional value.

7. Spinach and Other Leafy Greens: Nutrient Powerhouses

Incorporating leafy greens like spinach, kale, or lettuce into your taco filling adds freshness and vital nutrients. Spinach is particularly rich in iron and vitamins A, C, and K, making it a health-conscious choice.

Use sautéed spinach as a base for your tacos or incorporate it raw for a crunchy texture. Pair it with creamy dressings or tangy lime juice to enhance its flavor. Experiment with mixing different greens for a colorful and nutrient-dense filling.

Leafy greens are known for their antioxidant properties and are low in calories, making them an ideal choice for anyone looking to maintain a healthy diet. By adding leafy greens to your tacos, you create a filling that’s as nutritious as it is delicious.

8. Radishes: A Spicy Kick

For those who enjoy a bit of heat, radishes are a fantastic addition. Their peppery crunch can liven up your tacos and provide a refreshing contrast to richer ingredients. Plus, they are low in calories, making them a diet-friendly option.

Sliced radishes can be used raw as a topping or pickled for an extra zing. Consider mixing them with other vegetables like cucumbers for a refreshing slaw that adds texture and flavor to your tacos. They’re also great for adding color, making your dish visually appealing.

Radishes are also known for their potential health benefits, including aiding digestion and providing detoxifying properties. They are rich in vitamin C and antioxidants, which together promote overall health. Including radishes in your tacos not only enhances the taste but can also contribute to your wellbeing.

9. Zucchini: Versatile and Nutritious

Zucchini is a versatile vegetable that can be easily incorporated into taco fillings. When cooked, it softens and absorbs surrounding flavors, making it a great canvas for spices and seasonings. This vegetable is low in calories and high in vitamins, making it a healthy choice.

Grilled or sautéed zucchini can be mixed with other vegetables for a hearty filling or used alone with spices to create a unique taco experience. You can also spiralize zucchini for a fun, pasta-like taco filling that’s both healthy and delicious.

Furthermore, zucchini is hydrating due to its high water content and can help in maintaining healthy skin. Adding zucchini to your tacos not only provides a tasty option but also promotes hydration and skin health.

10. Sweet Potatoes: The Sweet Alternative

If you’re looking to add a bit of sweetness to your tacos, consider using sweet potatoes. Roasted, mashed, or even spiralized, sweet potatoes bring a complex flavor that pairs beautifully with spices and other vegetables. They are high in fiber, vitamins A and C, and are a great source of carbohydrates that provide energy.

When preparing sweet potatoes for tacos, try roasting them with a sprinkle of chili powder or cumin for a smoky touch. Their natural sweetness balances well with spicy components, creating a harmonious flavor profile. (See: CDC on nutrition and vegetables.)

Sweet potatoes are also known for their antioxidant properties and can help improve gut health. Including them in your tacos not only enriches the taste but can also boost your nutritional intake.

11. Beets: Earthy and Colorful

Beets are an underrated taco ingredient that adds both earthiness and a stunning color. Roasted or pickled, beets can be sliced thinly or cubed for a unique taco filling. Their sweet, earthy flavor pairs well with tangy sauces or citrus-based toppings.

Beets are packed with nutrients, including fiber, folate, and manganese, making them a great addition to your taco lineup. They also contain nitrates, which can enhance athletic performance by increasing blood flow.

Try a beet slaw mixed with cabbage and a tangy dressing for a crunchy and visually appealing taco topping. The vibrant color of beets can make your tacos stand out on any table, impressing guests and family alike.

12. Eggplant: The Savory Substitute

Eggplant is another fantastic vegetable that can add depth to your taco filling. Its unique texture makes it ideal for soaking up flavors. When grilled or roasted, eggplant develops a smoky flavor that complements a wide range of spices.

To prepare eggplant for tacos, dice it up, then sauté it with garlic and your favorite spices. Its versatility allows it to be mixed with other vegetables or served as a standalone filling. Topped with a fresh salsa or creamy dressing, eggplant tacos can be incredibly satisfying.

Additionally, eggplants are rich in antioxidants and fiber, promoting heart health and aiding digestion. By adding eggplant to your tacos, you’re not just enriching the flavor but also boosting the health benefits of your meal.

13. Cauliflower: The Clever Choice

Cauliflower has gained popularity in recent years as a versatile vegetable that can replace grains and meats in various recipes. For tacos, cauliflower can be roasted, riced, or even used to make a gluten-free taco shell. When seasoned properly, it can take on robust flavors, making it a great filling option.

Try riced cauliflower mixed with spices and black beans for a hearty vegan taco. Alternatively, roasted cauliflower florets can add a satisfying crunch and depth to your dish. Adding a drizzle of tahini or a sprinkle of nutritional yeast can enhance its flavor profile.

Cauliflower is low in calories and high in vitamins C and K, making it a great weight-loss-friendly option. Plus, its high fiber content can promote feelings of fullness, making your taco experience even more enjoyable.

14. Broccoli: The Nutritional Powerhouse

Broccoli isn’t just for stir-fry anymore. This nutrient-packed vegetable can also make a great taco filling. When steamed or roasted, broccoli retains a satisfying crunch and nutty flavor that pairs well with a variety of seasonings.

Chop broccoli into small florets and toss it with olive oil, garlic, and spices before roasting. The result is a flavorful filling that can stand alone or be combined with other vegetables and proteins. A sprinkle of cheese on top can elevate the flavor even further.

Broccoli is rich in vitamins K and C, as well as fiber, making it an excellent choice for a wholesome taco. Including broccoli in your tacos not only adds flavor but also boosts their nutritional profile significantly. (See: WHO guidelines on healthy diets.)

About Us

The Edvocate was created in 2014 to argue for shifts in education policy and organization in order to enhance the quality of education and the opportunities for learning afforded to P-20 students in America. What we envisage may not be the most straightforward or the most conventional ideas. We call for a relatively radical and certainly quite comprehensive reorganization of America’s P-20 system.

That reorganization, though, and the underlying effort, will have much to do with reviving the American education system, and reviving a national love of learning.  The Edvocate plans to be one of key architects of this revival, as it continues to advocate for education reform, equity, and innovation.
