15 Real Teacher Lunches – Easy, Yummy, and Fast!

1. Turkey and Avocado Wrap: Spread avocado on a whole wheat wrap and layer with turkey slices, lettuce, and tomato. Roll up and slice into bite-sized pieces.

2. Caprese Salad Skewers: Alternate cherry tomatoes, fresh mozzarella, and basil leaves on skewers. Drizzle with balsamic glaze and sprinkle with salt and pepper.

3. Greek Quinoa Salad: Combine cooked quinoa, diced cucumbers, cherry tomatoes, feta cheese, and olives in a bowl. Dress with lemon juice, olive oil, and Greek seasoning.

4. Chicken Caesar Wrap: Fill a whole wheat wrap with grilled chicken, romaine lettuce, shredded Parmesan cheese, and Caesar dressing. Roll up tightly and cut into slices.

5. Veggie Sushi Rolls: Spread sushi rice onto a sheet of nori. Add thinly sliced vegetables like cucumber, avocado, and bell peppers. Roll tightly using a sushi mat and slice into bite-sized pieces.

6. Quinoa Stuffed Bell Peppers: Cut the top off bell peppers and remove the seeds. Fill with cooked quinoa mixed with black beans, corn, salsa, and shredded cheese. Bake until peppers are tender.

7. Mediterranean Hummus Bowl: In a bowl, layer hummus, sliced cucumbers, cherry tomatoes, Kalamata olives, and feta cheese. Serve with pita chips or crackers.

8. Chicken and Vegetable Stir-Fry: Sauté chicken strips with mixed vegetables like bell peppers, carrots, and broccoli. Season with soy sauce, ginger, and garlic. Serve over rice or quinoa.

9. Caprese Pasta Salad: Cook pasta according to package instructions and rinse with cold water. Toss with cherry tomatoes, fresh mozzarella, basil leaves, and balsamic vinaigrette.

10. Turkey and Apple Wrap: Spread cream cheese on a whole wheat wrap and layer with turkey slices, apple slices, and spinach leaves. Roll up tightly and cut into slices.

11. Mediterranean Quinoa Bowl: Combine cooked quinoa, chickpeas, diced cucumbers, cherry tomatoes, feta cheese, and red onion in a bowl. Dress with lemon juice, olive oil, and oregano.

12. Chicken and Vegetable Quesadillas: Fill whole wheat tortillas with grilled chicken, sautéed bell peppers and onions, and shredded cheese. Cook until cheese is melted and tortillas are crispy.

13. Greek Yogurt Parfait: Layer Greek yogurt, mixed berries, and granola in a jar or container. Drizzle with honey or maple syrup for added sweetness.

14. Asian Noodle Salad: Cook soba noodles according to package instructions and rinse with cold water. Toss with shredded carrots, thinly sliced cabbage, green onions, and sesame dressing.

15. Turkey Club Lettuce Wraps: Wrap turkey slices, crispy bacon, sliced avocado, tomato, and mayonnaise in large lettuce leaves. Secure with toothpicks and enjoy!

About Us

The Edvocate was created in 2014 to argue for shifts in education policy and organization in order to enhance the quality of education and the opportunities for learning afforded to P-20 students in America. What we envisage may not be the most straightforward or the most conventional ideas. We call for a relatively radical and certainly quite comprehensive reorganization of America’s P-20 system.

That reorganization, though, and the underlying effort, will have much to do with reviving the American education system, and reviving a national love of learning.  The Edvocate plans to be one of key architects of this revival, as it continues to advocate for education reform, equity, and innovation.
